<p>Fitnessista finally shared her recipe for her famous macaroons! Once I saw that post, I couldn&#8217;t wait to attempt them. These aren&#8217;t the typical French Macaroons that I normally salivate over, they are a raw take on the coconut Macaroon &#8211; a delicious treat nonetheless!</p>
<p>I decided to go halvesies on the recipe because I wasn&#8217;t sure how they would turn out since I do not have a dehydrator. [boy would I love one, but would have NO WHERE to put it].</p>

<p>But then, I forgot about the halvesies when I went to add the coco, so I tried to scoop some of the excess out, but decided this batch would be extra chocolatey.</p>

<p><span style="color:#008000;">Verdict:</span> Tasty! Even Dan thought so! Perfect crisp on the outside with a moist coco-coconut inside. A simple w and all natural treat to enjoy.</p>

<p><span style="color:#008000;">Make Again:</span> Sure! These were just chocolate flavored. There are a bunch of other flavors to whip up; peanutbutter, lemon, blueberry&#8230;</p>

<p style="padding-left:60px;"><em>2 2/3 C shredded unsweetened coconut </em></p>
<p style="padding-left:60px;"><em> 1/3 C cocoa powder </em></p>
<p style="padding-left:60px;"><em> 1 1/3 C almond meal <span style="color:#008000;">[I substituted oat flour]</span></em></p>
<p style="padding-left:60px;"><em> 1/4 t cinnamon</em></p>
<p style="padding-left:60px;"><em> 1 t vanilla</em></p>
<p style="padding-left:60px;"><em> hefty pinch of sea salt</em></p>
<p style="padding-left:60px;"><em> 1/3 C coconut oil</em></p>
<p style="padding-left:60px;"><em> C maple syrup (or a little more depending of the texture of the dough)</em></p>
<p style="padding-left:30px;"><em><strong>Directions</strong></em></p>
<p style="padding-left:60px;"><em>Mix all the dry ingredients</em></p>
<p style="padding-left:60px;"><em>Add all the wet ingredients</em></p>
<p style="padding-left:60px;"><em>Using a melon ball scooper, scoop onto dehydrator trays or onto a greased cookie sheet. Dehydrate for 36 hours or so, until crispy on the outside and soft on the inside. Or bake on lowest oven setting <span style="color:#008000;">[I did 200]</span> for roughly 20 minutes. </em></p>

<p>Who doesn&#8217;t envy The Pioneer Woman? Who can&#8217;t stop drooling over her every creation? I sometimes get intimidated by her recipes, as she has a full kitchen and much more skill than I do, so I opted for what seemed to be a simple option. Salsa! Who doesn&#8217;t like salsa? [no, seriously, who doesn’t like salsa? I've never met a non-salsa lover. I doubt they exist].</p>

<p>On to the tacos.</p>
<p>The temperature has averaged right around 90 nearly every day for the past 6 weeks. [I'm not complaining, simply stating the facts]. Our apartment doesn&#8217;t have a strong air conditioner unit, and I&#8217;m pretty sure Dan ripped off some of the insulation to our oven. Which means&#8230;no turning on the oven because we will roast, and die. Solution: the Crock Pot! Cool and simple.</p>

<p style="padding-left:60px;"><em>1 can (28 Ounce) Whole Tomatoes With Juice</em></p>
<p style="padding-left:60px;"><em>2 cans (10 Ounce) Rotel (diced Tomatoes And Green Chilies)</em></p>
<p style="padding-left:60px;"><em>1/4 cup Chopped Onion</em></p>
<p style="padding-left:60px;"><em>1 clove Garlic, Minced</em></p>
<p style="padding-left:60px;"><em>1 whole Jalapeno, Quartered And Sliced Thin</em></p>
<p style="padding-left:60px;"><em>1/4 teaspoon Sugar</em></p>
<p style="padding-left:60px;"><em>1/4 teaspoon Salt</em></p>
<p style="padding-left:60px;"><em>1/4 teaspoon Ground Cumin</em></p>
<p style="padding-left:60px;"><em>1/2 cup Cilantro (more To Taste!)</em></p>
<p style="padding-left:60px;"><em>1/2 whole Lime Juice</em></p>
<p style="padding-left:30px;"><em>Salsa Directions</em></p>
<p style="padding-left:60px;"><em>Note: this is a very large batch. <span style="color:#008000;">[She is not kidding, it is a very large batch!]</span> Recommend using a 12-cup food processor, or you can process the ingredients in batches and then mix everything together in a large mixing bowl.</em></p>
<p style="padding-left:60px;"><em>Combine whole tomatoes, Rotel, onion, jalapeno, garlic, sugar, salt, cumin, lime juice, and cilantro in a blender or food processor. Pulse until you get the salsa to the consistency you&#8217;d like&#8212;I do about 10 to 15 pulses. Test seasonings with a tortilla chip and adjust as needed.</em></p>
<p style="padding-left:60px;"><em>Refrigerate salsa for at least an hour. Serve with tortilla chips or cheese nachos.</em></p>
<p style="padding-left:30px;"><em>Slow Cooker Chili Chicken  Taco <em>Ingredients</em></em></p>
<p style="padding-left:60px;"><em>2 pounds boneless, skinless chicken thighs (about 6)</em></p>
<p style="padding-left:60px;"><em>4 garlic cloves, thinly sliced</em></p>
<p style="padding-left:60px;"><em>1/2 cup prepared tomato salsa, plus more for serving (optional)</em></p>
<p style="padding-left:60px;"><em>1 to 2 tablespoons chopped canned chipotle chiles in adobo</em></p>
<p style="padding-left:60px;"><em>1 tablespoon chili powder</em></p>
<p style="padding-left:60px;"><em>Coarse salt and ground pepper</em></p>
<p style="padding-left:60px;"><em>8 hard corn taco shells</em></p>
<p style="padding-left:60px;"><em>Cilantro, shredded cheese, lime wedges, and sour cream, for serving (optional)</em></p>
<p style="padding-left:30px;"><em>Slow Cooker Chili Chicken Taco Directions</em></p>
<p style="padding-left:60px;"><em></em><em>In slow cooker, combine chicken, garlic, salsa, chiles, chili powder, 1 teaspoon salt, and teaspoon pepper. Cover; cook on high, 4 hours (or on low, 8 hours).</em></p>
<p style="padding-left:60px;"><em></em><em>Transfer chicken to a serving bowl, and shred, using two forks; moisten with cooking juices. Serve in taco shells, with toppings, if desired.</em></p>

<p>If you haven’t heard, I’m heading to Napa tomorrow for a long 5 day weekend. Meaning, I’m going to be devouring some amazing eats and savoring the fruits of the valley – not cooking any new recipes this weekend. In order to keep my RAW new year’s challenge, I decided I would make something before the weekend, something I can grab and take with me as breakfast/snack during the 6 hour plane ride to SFO. Hmm…Well, I am a big fan of bars…Larabars, Luna bars, Clif bars…pretty much any type of bar [wine bars included, hehe J]. Sooo, why not make my own to take on the trip!</p>
<p>There are about a million and five different recipes for granola/energy bars out there, but this one tickled my fancy.</p>

<p><span style="color:#008000;">Verdict:</span> Amazing! They should probably be called homemade <em>CANDY</em> bars, because these babies are sweet!</p>
<p><span style="color:#008000;">Level:</span> Super simple</p>
<p><span style="color:#008000;">Make Again:</span> Absolutely! I would probably half the amount of honey this recipe calls for, because I feel guilty about how sweet they are. Maybe add a second banana instead to help stick the ingredients together. Add-in options are endless!</p>

<p style="padding-left:60px;"><em>1.5 cup McCain’s quick cooking oats</em></p>
<p style="padding-left:60px;"><em>1/2 cup unsweetened shredded coconut</em></p>
<p style="padding-left:60px;"><em>1/2 cup chopped unsweetened cherries and a handful of raisin mix (any dried fruit will work)</em></p>
<p style="padding-left:60px;"><em>1/2 cup chocolate chips</em></p>
<p style="padding-left:60px;"><em>1/2 cup maple syrup (or agave, honey)</em></p>
<p style="padding-left:60px;"><em>1/2 cup peanut butter (or any nut butter)</em></p>
<p style="padding-left:60px;"><em>2 tbsp ground flax seed</em></p>
<p style="padding-left:60px;"><em>2 tsp cinnamon</em></p>
<p style="padding-left:60px;"><em>2 tsp vanilla extract</em></p>
<p style="padding-left:60px;"><em> </em></p>
<p style="padding-left:30px;"><strong><em>Directions:</em></strong></p>
<p style="padding-left:60px;"><em>Mash banana in bowl.</em></p>
<p style="padding-left:60px;"><em>Add sweetener of choice and nut butter. Mix well.</em></p>
<p style="padding-left:60px;"><em>Add in remainder of “dry” ingredients. Mix well. </em></p>
<p style="padding-left:60px;"><em>Spread in small backing pan and stick in freezer for a few hours. </em></p>

<p style="padding-left:60px;"><em>1 tablespoon spaghetti sauce</em></p>
<p style="padding-left:60px;"><em>1/2 cup mozzarella cheese [I used goat cheese]</em></p>
<p style="padding-left:60px;"><em>1/2 tablespoon sliced black olives</em></p>
<p style="padding-left:60px;"><em>4 slices pepperoni sausage [no pep for me]</em></p>
<p style="padding-left:60px;"><em>1 clove garlic, chopped</em></p>
<p style="padding-left:60px;"><em> </em></p>
<p style="padding-left:30px;"><strong><em>Directions</em></strong></p>
<p style="padding-left:60px;"><em>Preheat the oven to 375 degrees F (190 degrees C).</em></p>
<p style="padding-left:60px;"><em>Place the mushroom on a baking sheet, and bake for 5 minutes in the preheated oven. Remove from the oven, and spread spaghetti sauce in the cup of the cap. Top with cheese, olives, pepperoni and garlic.</em></p>
<p style="padding-left:60px;"><em>Bake for an additional 20 minutes, or until cheese is melted and golden.</em></p>

<p>I really never liked meatloaf as a kid. I think whenever Share-bear made it, I doused it in ketchup to hide any taste of the actual food it was made of. However, for some reason I was feeling an inkling to make some. But not just any meatloaf. Since I don’t like buying meat, I needed a meatless meatloaf. <a href="http://peasandthankyou.com/recipage/" target="_blank">Peas and Thank You</a> to the rescue!  The fact that these are in muffin form made them a million time more appealing. I’m really dig’n the use of muffin tins!</p>

<p>Flaxseed and marinara. Not going to lie, the marinara I bought wasn&#8217;t anything worth buying again &#8211; but it didn&#8217;t have any added sugars or other &#8220;gunk&#8221; so it kept things on the healthy side.</p>

<p>The olives are a must &#8211; I love the flavor they add. And be sure to let them cool [unlike me] otherwise they fall apart a bit.</p>

<p><span style="color:#008000;">Level:</span> Easy. The hardest part was mashing the beans. You gotta put some muscle into it!</p>
<p><span style="color:#008000;">Make Again:</span> Yes –   easy to make ahead and have for a few lunches throughout the week on top of a kale or broccoli slaw salad. Plus you can dress them up how ever you’d like. Slice up some avocados and a little salsa and they are now Mexican meatless meatloaf muffins <img src='http://s0.wp.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> </p>

<p style="padding-left:60px;"><em>1/2 cup marinara sauce, jarred or homemade, divided [1 added an extra 3/4c cup]</em></p>

<p style="padding-left:60px;"><em>Two 14 oz cans pinto beans, drained and rinsed</em></p>

<p style="padding-left:60px;"><em>Preheat oven to 400 degrees.</em></p>
<p style="padding-left:60px;"><em>In a small bowl, combine 1/4 c. of the marinara sauce and the ground flax. Stir to combine and set aside to thicken.</em></p>
<p style="padding-left:60px;"><em>In a large bowl, mash pinto beans with a fork or potato masher.</em></p>
<p style="padding-left:60px;"><em>Do not over mash, we aren’t looking for refried beans, but a nice chunky texture.</em></p>
<p style="padding-left:60px;"><em>Add onion, oats, garlic, Worcestershire, olive oil, nutritional yeast, oregano, parsley, salt and pepper.</em></p>
<p style="padding-left:60px;"><em>Stir to combine.</em></p>
<p style="padding-left:60px;"><em>Add in marinara flax mixture and stir until fully incorporated. –I added about 3/4c more marinara at this point</em></p>
<p style="padding-left:60px;"><em>Scoop bean mixture into a muffin tin that has been lightly greased or sprayed with cooking spray.</em></p>
<p style="padding-left:60px;"><em>Bake for 15-17 minutes, until edges are starting to brown. Top each muffin with a spoonful of marinara and a few sliced olives.</em></p>
<p style="padding-left:60px;"><em>Return to oven for another 10-12 minutes, until muffins are firm and set.</em></p>
<p style="padding-left:60px;"><em>Allow muffins to cool for several minutes, as they will firm up even more, before serving.</em></p>

<p>I’m still trying to stay away from chocolate, candy and sweets; however, I wanted try something new that I could use as a grab and go breakfast or snack. Muffins popped into my mind, as long as they weren’t loaded with sugar. So I set out to find a gluten free low sugar muffin. Luckily I already had coconut flour in my cabinet [not sure why…] so this recipe seemed perfect! [bonus that it already was gluten free!]</p>

<p>I went all out coconut and finally bought coconut oil! This stuff is raved about all over the blogosphere. It feels like butter, and tastes like coconut. It’s in a more solid state, so melting it down was key when it came to combining it with the other wet ingredients.</p>

<p>The recipe said the batter would be thick, which I didn&#8217;t believe could happens since the wet ingredients were super runny, but it did thicken up once the wisking was complete.</p>

<p><span style="color:#008000;">Verdict:</span> Pretty good! They have the texture of banana bread with the flavor of a dense and moist coconut pancake.</p>
<p><span style="color:#008000;">Level:</span> Easy. The hardest part was making sure the coconut oil was properly incorporated into everything.</p>
<p><span style="color:#008000;">Make Again:</span> Yes! I may even try them with different fruits. Blueberry would probably be awesome!</p>

<p style="padding-left:60px;"><em>1 tablespoon brown sugar</em></p>
<p style="padding-left:60px;"><em>1/2 teaspoon vanilla extract</em></p>
<p style="padding-left:60px;"><em>2 ripe bananas (mashed)</em></p>

<p style="padding-left:30px;"><strong><em>Directions</em></strong></p>
<p style="padding-left:60px;"><em>Preheat oven at 350 F degrees.</em></p>
<p style="padding-left:60px;"><em>Sift the coconut flour, baking soda, baking powder and salt together into a small bowl. Set aside.</em></p>
<p style="padding-left:60px;"><em>In a medium sized bowl beat eggs together. And add butter, coconut oil, milk, honey, sugar and vanilla. Whisk together to blend.</em></p>
<p style="padding-left:60px;"><em>Whisk in coconut flour mixture and bananas until well blended. Batter will be thick. Divide batter among the muffin tins lined with paper liners.</em></p>
<p style="padding-left:60px;"><em>Bake in preheated oven for 20 minutes or until toothpick inserted in center comes out clean.</em></p>

<p><span style="color:#008000;">Make Again:</span> Possibly. Maybe without pumpkin next time – it was good flavor, but overpowered the sweet coconut taste that I like in curry. I might try it with potatoes instead of the squash.</p>

<p><span style="color:#008000;">Verdict</span>: meh. I was very underwhelmed by the flavor. I enjoy artichoke dip and artichokes in my salad, but this was sort of bland. I also was a bit confused as to which parts I could eat…</p>

<p><span style="color:#008000;">Make Again:</span> Probably not – it just wasn’t tasty enough. Maybe I am doing something wrong?</p>

<p>The weather has been so summer like the past few days and it got me in the mood for a typical summer night dinner…burgers! But not just any burgers [because those are boring], spicy black bean burgers. Added bonus – I had sweet potatoes in the fridge so I could give my first batch of sweet potato fires a try.</p>
<p>For the burger – I pretty much followed Jenna’s recipe, except I subbed quinoa for Panko. [these are protein packed gluten free burgers!] I also added a little red onion.</p>

<p>Luckily my food processor showed up!</p>

<p>There were quite a lot of beans, so I had to mix them in the processor in batches – My little chopper friend was getting a workout, that’s for sure!</p>

<p>I put the mix in the fridge for a few minutes to “harden” up a bit – it seemed a little to wet to form into patties at first.</p>

<p>I also had a hard time cooking them in a pan [I am handicapped when it comes to flipping anything], so instead, I baked them in the oven</p>

<p>For the fries – I just sliced up the sweet potatoes drizzled with EVOO + salt and popped them in the over for 13 mins at 450 – then flipped. I think they are better when they are a little charred. [I’m not just saying that because <span style="text-decoration:line-through;">some</span> most of mine turned out that way]</p>

<p><span style="color:#008000;">Verdict:</span> Delicious! A little crumbly, but I didn’t mind that because I didn’t have mine on a bun. Maybe the Panko would help them stick together better.</p>
<p><span style="color:#008000;">Level:</span> Easy, as long as you have a processor or blender, otherwise mashing the beans by hand would totally blow.</p>
<p><span style="color:#008000;">Make Again:</span> Oh, For Sure! The fries were great [and healthier] and the burgers make great salad toppers for lunch the rest of the week, I love repurposing leftovers!</p>

<em>Ingredients:</em></strong></p>
<p style="padding-left:60px;"><em>2 cans black beans, drained and rinsed</em></p>
<p style="padding-left:60px;"><em>1 T ground flax + 3 T water</em></p>
<p style="padding-left:60px;"><em>1 jalapeno</em></p>
<p style="padding-left:60px;"><em>2 cloves garlic</em></p>
<p style="padding-left:60px;"><em>2 T tomato sauce</em></p>
<p style="padding-left:60px;"><em>1/2 cup Panko breadcrumbs</em></p>
<p style="padding-left:60px;"><em>2 tsp cumin</em></p>
<p style="padding-left:60px;"><em>1 1/4 tsp salt</em></p>
<p style="padding-left:60px;"><em>1/2 cup corn (fresh or frozen and defrosted)</em></p>
<p style="padding-left:60px;"><em>avocado for topping</em></p>
<p style="padding-left:60px;"><em>olive oil (or canola oil)  for frying burgers</em></p>
<p style="padding-left:30px;"><strong><br />
</strong><strong><em>Directions</em></strong></p>
<p style="padding-left:60px;"><em>Seed and roughly chop jalapeno. Add it and the garlic cloves to a food processor (or high speed blender) and mince finely. (Alternatively, you could chop them yourselves very finely but it’s just easier at this point to throw them in a food processor.)</em></p>
<p style="padding-left:60px;"><em>Add one can of beans to the jalapeno/garlic mixture and pulse to combine. Add cumin and salt and pulse until mixture resembles chunky black bean dip.</em></p>
<p style="padding-left:60px;"><em>In a small bowl, mix together the ground flax and water. Let sit for five minutes.</em></p>
<p style="padding-left:60px;"><em>Transfer the mixture in the food processor to a large bowl and stir in the bread crumbs, tomato sauce, flax and corn. Stir well until everything is combined. Add remaining black beans.</em></p>
<p style="padding-left:60px;"><em> </em><em>Heat a little olive oil in a skillet on medium high heat. Form black bean mixture into patties and fry for about 4 minutes per side, until golden and crusty brown.</em></p>
<p style="padding-left:60px;"><em>Serve burgers with avocado slices, sriracha and ketchup.</em></p>

<p>Since my hiatus from sweets is finally over, I figured some sort of baked good was in order. I had seen this recipe on <a href="http://girlmeetslife.com/" target="_blank">Girl Meets Life</a> a few weeks back and was itching to try it. Anything with the title “Cake Batter” must be delicious, right?</p>
<p>In an attempt to stay as Gluten Free as possible &#8211; I opted for GF cake mix instead of the standard Betty Crocker [yes Betty also has GF mixes; however, they were more $ than Bob's)</p>

<p>Make sure the PB is melted - it makes it easier to whisk</p>

<p>The mixture is pretty crumbly [note - I didn't use the entire bag of cake mix because it was slightly more than Betty's]</p>

<p>After adding the milk &#8211; it got super gooey. [note - I used almond milk and added a bout a tablespoon of butter]</p>

<p>Make sure to not over cook, otherwise you won&#8217;t get the cake batter effect!</p>

<p><span style="color:#008000;">Verdict:</span> Decent. I think my adaption with the GF cake mix and natural PB decreased the sweetness factor, but they still had good flavor and a chewy-gooey texture</p>
<p><span style="color:#008000;">Level:</span> Easy. Whisk, mix, spread, bake. EAT</p>
<p><span style="color:#008000;">Make Again:</span> Possibly – I actually want to try the <a href="http://girlmeetslife.com/2012/03/nutella-cake-batter-blondies/" target="_blank">Nutella</a> version!</p>

<p style="padding-left:60px;"><em>1 box yellow cake mix</em></p>
<p style="padding-left:60px;"><em>3/4 cup smooth peanut butter, melted</em></p>
<p style="padding-left:60px;"><em>1 egg</em></p>
<p style="padding-left:60px;"><em>1 tablespoon canola oil</em></p>
<p style="padding-left:60px;"><em>1/2 cup milk</em></p>
<p style="padding-left:60px;"><em>1 cup chocolate chips</em></p>
<p style="padding-left:30px;"><strong><em>Directions</em></strong></p>
<p style="padding-left:60px;"><em>Preheat oven to 350 degrees. Place cake mix in a large bowl, set aside. In a small bowl whisk together the egg, oil, and peanut butter. Add wet mixture to the cake mix and combine as much as possible, then add the milk. Mix in the chocolate chips. Place batter in a greased 8×8 pan or 8-inch cake pan,  and bake for 27-29 minutes or just until the edges turn golden. <strong>Let cool for 60 minutes before cutting because the gooey center needs to set.</strong> The result will be a decadent, cake-batter texture.</em></p>
